Triple FFF is run by its owner and chef, who cooks the way he learned at home: the Levantine method, charcoal, patience, and a marinade nobody gets the recipe for.
The shop opened as a small counter in Oud Metha with one spit and a fryer. The name came out of the three things he kept repeating to the kitchen: fresh, fast, flavourful. It stuck, and it ended up on the sign.
The cheese happened by accident. A regular asked for a slice inside his wrap, then two, then he asked for it grilled until it stretched. Word travelled down the street. Now the Triple FFF Shawarma is built that way on purpose, and the fries got the same treatment.

The spit is always turning and the fryer is always hot, so a shawarma takes about a minute from order to paper.
